    Potato Soup

    3-4 potatoes, peeled and diced
    1/4 cup celery, chopped
    1 1/2 cups water
    2 Tablespoons butter or margarine
    1 quart milk
    1 Tablespoon parsley
    2 hardboiled eggs, diced
    salt and pepper to taste

    Cook the potatoes and celery int hewater and butter until tender. Then, add the milk, seasonings and eggs and heat thoroughly. - The Best of Amish Cooking

    Cucumbers and Onions

    2 Medium Cucumbers
    2 Medium Onions
    2-3 Tablespoons Mayonnaise
    1 Tablespoon Sugar
    1 Tablespoon Vinegar

    Peel cucumbers and slice thin. Layer in a shallow dish, sprinkling each layer with salt. Let stand overnight. In the morning, drain cucumbers and rinse. Let dry on paper towels.

    Slice onions thin. Mix gently with the cucumbers. Beat together the mayonnaise, sugar, and vinegar until creamy. Stir into mixed cucumbers and onions.

    Mock Apple Pie w/Zucchini

    Use big zucchinis, but still tender enough to pierce the skin easily with your thumbnail. Peel, cut in quarters lengthwise, remove the seeds and slice crosswise.

    4 cups sliced zucchini, cooked until tender crisp
    2 Tablespoons lemon juice
    dash of salt
    Mix in a bowl:
    1 1/4 cups sugar
    1 1/2 teaspoons cinnamon
    1 1/2 teaspoons cream of tartar
    1 1/2 teaspoons cornstarch
    1/2 teaspoon nutmeg
    3 Tablespoons flour

    Add the zucchini and mix well. It will be runny. Dump the filling into a 9 inch pie crust and dot with butter. Add the top crust and bake at 400 degrees F. for 40 minutes or until golden brown.

    Alternative Uses for Common Household Items

    1. Treat a minor cut to stop bleeding with a pinch of alum (a pickling salt)

    2. Air fresheners - Toss a handful of whole cloves, cinnamon, nutmeg, allspice, or a combination of any into a pot of water and simmer on stovetop for about 30 minutes.

    3. Keep ants out of the sugar canister - tape a bay leaf to the inside of the canister to deter these pests. Also, works in cupboards.

    4. Sweet Feet - Crumble a leaf or two of sage into your shoes before putting them on. Kills odor causing bacteria. Shake remaining sage into trash at end of day.

    5. Hair tonic for shine and color enhancement -

    Dark hair: use 1 Tablespoon crumbled sage or 1 sprig chopped fresh rosemary or a mixture of 1 teaspoon allspice, 1 teaspoon ground cinnamon, and 1/2 teaspoon ground cloves.

    Blond hair: 1 Tablespoon chamomile.

    Pour 1 cup boiling water over the herb or spice mix, let it steep of 30 minutes, strain it through a coffee filter, and let cool. Pour it repeatedly over your hair (use a dishpan or large bowl to catch tonic and re-apply). Use as a final rinse after shampooing.
