Master Baking Mix Recipes

Master Baking Mix recipes are intended for use with the Master Baking Mix. Making your own baking mix will not only save you money, but will save time compared to baking from scratch. The mix and the recipes are from the More-With-Less Cookbook, by Doris Janzen Longacre

Note: This baking mix is can be used in any recipe calling for store bought mixes (i.e. bisquick).

Corn Bread

Preheat oven to 400 degrees
Serves 8

Stir together in a bowl:
1 1/2 cup Master Baking Mix
2 Tbsp sugar
1/2 tsp salt
3/4 cup cornmeal
1 tsp chli powder (optional)

Combine in a separate bowl:
1 egg
3/4 cup milk
1 cup cream style corn

Stir liquids into dry ingredients just until flour is all moistened. Pour into greased 9" square pan and bake 20-25 minutes.

Options:

  • add 1/4 cup chopped green pepper
  • For crunch topping, sprinkle on 1/2 cup grated cheese and 2 Tbsp sesame seed before baking
  • Add 1/4 cup Bran

Pancakes or Waffles

Serves 4
Beat together in a bowl:
1 cup milk
1 egg

Stir in:
1 1/2 cup Master Baking Mix

Bake on hot griddle or waffle iron.

Options:

  • For lighter waffles, separate egg;add yolk with milk. Beat egg white until stiff and fold into batter just before baking.
  • Increase milk for thinner batter if desired.

Biscuits

Makes 8 biscuits
preheat oven to 400 degrees

Combine in bowl:
1 1/2 cup Master Baking Mix
1/3 cup milk

Add milk all at once, stirring 25 strokes. Knead lightly on floured board. Roll 1/2 inch thick, cut, and place on ungreased baking sheet. Bake 10 minutes.

Options:

  • Add grated cheese, chopped herbs
  • Increase milk to 1/2 cup for drop biscuits
  • Use as topping on casseroles, cobblers, meat and vegetable pies, or wherever biscuit dough is called for.

Coffee Cake

Serves 6
preheat oven to 375 degrees

Beat together in a bowl:
1/3 cup milk
1 egg

Add:
1/4 cup sugar
2 1/4 cup Master Mix

Stir wntil well blended (about 1 minute). Pour into greased 8 inch square baking pan.

Combine and sprinkle over:
1/2 cup brown sugar
3 Tbsp margarine
1/2 tsp cinnamon
1/4 cup chopped nuts (optional)

Bake 25 minutes. Serve Warm

Muffins

Makes 12 muffins
preheat oven to 425 degrees

Beat together in a bowl:
1 egg
1 cup milk
2 Tbsp sugar

Add:
3 cups Master Baking Mix

Stir just until dry ingredients are moistened. Spoon into greased muffin pans and bake 20 minutes.

Options:

  • Add drained fruit, chopped nuts or chopped dried fruit.
  • Replace one third of mix called for with quick-cooking oatmeal or all-bran cereal.
  • Add chopped dried fruit and/or nuts to muffin recipe and bake as a fruit bread: use greased 5x8 loaf pan and bake 40 minutes at 350 degrees.
